CitrusDefence® is used for disinfection of surfaces, applications for which a series of tests at the Pasteur Institute of Lille, France, according to the European Suspension Test BS EN 1276 has been realized.

CitrusDefence® is extracted from the pith of oranges through a specialized process. The extract contains a mixture of natural ingredients that, when combined, produce an extremely powerful anti-bacterial, anti-mould and anti-fungal agent. 

The extract consists of Vitamin C, Vitamin P (Bioflavonoid), Natural Sugars, and various organic acids, (Ascorbic acid, Citric acid). 
This powerful, anti-bacterial/virocidal agent is mixed with other food grade, natural and safe products to produce CitrusDefence®. 
One of the additives in CitrusDefence® is Yucca Schidegra which helps CitrusDefence® break down Biofilms that cling to surfaces and house large quantities of bacteria. Bacteria attached to Biofilms are 150-3000 times more resistant to chlorine than unattached cells.

CitrusDefence® is not a poison like chlorine. It does not poison the bacteria.

​When exposed to CitrusDefence®, bacteria experience membrane changes or damaging due to penetration of the cell wall of the bacteria. It is this mechanism that is responsible for killing the bacteria and reducing growth, hence creating a sanitizing effect and at the same time prolonging the lifespan of fresh products.

Food Processing Areas and Clean Rooms. 
As a sanitizer, CitrusDefence® can be applied to walls, ceilings, floors and any work surfaces where pathogens or mould may be found. The bacterial growth is stopped and pathogens present are killed.

Fruit & Vegetables.
CitrusDefence® keeps fruit and vegetables crisp and looking fresh for longer. It extends shelf-life by 2-3 times normal shelf-life expectation. CitrusDefence® reduces the bacteria-loading on those vegetables susceptible to high bacteria contamination and it will reduce spoilage by killing mould.

Food Processing.
As a non-rinse wash for meat, poultry, fish, vegetables and fresh fruit products including cut fruit used in fresh fruit salads, CitrusDefence® stops bacterial growth, increases shelf life and minimizes the risk of food poisoning.

Fish, shrimp and scampi Production.
Reduces bacteria-loading and keeps it at low levels thereby extending shelf-life and reducing odour. Scampi and Shrimp should be dipped in a CitrusDefence® solution prior to freezing and packing. They can also be bathed in a CitrusDefence® solution when thawing. The shelf-life of filleted and whole fish is extended when dipped into a 2% CitrusDefence® solution for 2-4 minutes. Equally, Shrimp and Scampi when dipped or glazed in CitrusDefence® will also minimize bacterial contamination. Bacteria loadings are substantially reduced on smoked and processed seafood thereby also minimizing the possibility of food poisoning.

Chicken Carcasses.
Reduces bacteria-loading by a 6 log reduction, extends shelf-life and reduces the risk of food poisoning. Chicken carcasses are washed in a CitrusDefence® solution at the end of the process line. The non-rinse wash leaves a residual of CitrusDefence® that continues to kill bacteria for up to 48 hours.

CitrusDefence® is a highly concentrated, broad-spectrum antimicrobial compound. Research has shown that the natural extracts found in CitrusDefence® are effective against more than 800 bacterial and viral strains, 100 strains of fungi and yeasts, as well as a large number of single-celled and multi-celled organisms. 

Included in this list are: 
Candida albicans (cause of common yeast infections), Parasites, Staphylococcus aureus, Salmonella typhi, Escherichia coli, Pseudomonas aeruginosa, Campylobacter, Listeria and Legionella. 
In a minimum inhibitory concentration study, the citrus extract found in CitrusDefence® was found to be 10 to 100 times more effective than other commonly used antimicrobials such as silver oxide suspension, chlorine bleach solution, and iodine.

This system requires that the product be effective at pathogen load in 10².

The sample tested of CitrusDefence® batch #0604011 has a bacterial activity in practical conditions in accordance with NF EN 1276 at 0.25% with 5 minutes contact at 20° on the four reference strains in dirty conditions. Therefore hospital grade surface disinfectant status.

​For many years chlorine and caustic soda have been the standard, cheap chemicals used to decontaminate surfaces & foodstuffs, and to reduce the risk of infections. It is now known and generally acknowledged, that this is a health hazard, and a proven cause of severe health problems.


I. Medical Area Decontamination

Hospitals, nursing homes and similar establishments are now acknowledged to have a major pathogenic problem : Methicillin Resistant Staphylococcus aureus.

This represents a significant and life threatening cause of hospital acquired infection, and the hospitals act as a reservoir for this pathogen.

Staphylococcus aureus is a pathogen found in the warm and moist areas of the body. In healthy people it causes little harm, but can cause severe and dangerous infections in patients who have had surgery, or who are suffering from boils, septicaemia or pneumonia.

Staphylococcus aureus is a thick walled bacterium, with the ability to develop resistance to antibiotics.

The most resistant strain of this bacteria encountered is resistant to the powerful antibiotic, methycillin and is therefore known as Methicillin Resistant Staphylococcus aureus, generally abbreviated to "MRSA". 

​New antibiotics were developed to overcome this trend, but S.aureus again developed resistance to these new antibiotics, with potentially disastrous consequences for patients from wound infection.

Antimicrobial Effects of Acids

■ How to retain or improve a product's flavour and at the same time extend its shelf life without exploring the outer limits of food safety ? 
■ You are also concerned about using only natural ingredients in the product. 
■ There are quite a number of effective preservatives available but the market is not always keen on them.

The market is embracing labels such as 'premium', 'traditional', 'natural' or 'no artificial flavourings', 'preservative free' and 'organic', and products in these segments have shown decent growth in Western markets. This scenario is not any different in Asia where people like their food fresh and are rather particular about quality, wherever they are able to afford the price premium. 

But Asian consumers in general do not easily compromise on taste for the sake of convenience and shelf life. 
A combination of mild process treatments, either chemical or physical, is often best for fresh and semi-processed food products in order to preserve flavour and texture and give the product a sufficient shelf life and microbial safety. 

Meat products, ready-to-eat meals, sauces, dressings, prepared salads and other acidified foods are kept refrigerated (at least after package opening) and are likely to contain preservatives. 
If they do receive a heat treatment, it is usually only a mild one. 

In these cases, organic acids have proven for decades their ability to perform as natural shelf life extenders and play an important role in a concept known as 'multiple hurdle technology'. Of course, the addition of organic acids or acidification will have an effect on flavour. Sometimes this is desired but at other times it is not. 

The major targets for antimicrobials are food spoilage micro-organisms that produce metabolic end products or enzymes which cause : 
■ off-odors, 
■ off-flavors, 
■ texture problems, 
■ discolouration, 
■ slime or haze, 
■ as well as food borne pathogens that cause illness. 

Micro-organisms may be inhibited by :
■ chilling, 
■ freezing, 
■ water activity reduction, 
■ nutrient restriction, 
■ ermentation or direct acidification, 
■ modified atmosphere packaging 
■ or through the addition of antimicrobials. 

Many antimicrobials are weak acids and therefore pH is the single most important factor. Weak acids are most effective in their undissociated form. This is because iOnce inside the cell, the acid dissociates because the cell interior has a near neutral pH. Protons generated from intracellular dissociation of the organic acid (H+) acidify the cytoplasm and must be removed by the organism. The cytoplasmic membrane is impermeable to protons and they must be actively transported to the exterior creating an electrochemical potential across the membrane called the proton motive force. This process will use energy and the constant influx of these H+ protons will eventually exhaust the micro-organism. 

Acids in combination are the most active antimicrobials : acetic, lactic, propionic, ascorbic and sorbic acids. 
Citric, malic, fumaric and other organic acids have limited activity but are used as acidulants and for flavourings. Combining acids has the benefit of harnessing synergy between those acids. 

This will bring down the pH more effectively as they have different pKa values and since each of the acids act upon a different spectrum of bacteria it will also provide a more powerful preservation effect.n this form they are effectively able to penetrate the cell membrane of a micro organism.

The complex combinations of organic acids create a synergistic reaction present in CitrusDefence® as a powerful biocide at low concentrations. The CitrusDefence® range has broad spectrum activity and is effective against bacteria, (both gram positive and gram negative) and viruses.  

CitrusDefence® formulations do not invoke pathogen mutations. The unique combination of it's active ingredients ensures that the biocide activity (via cell wall intrusion) is not influenced by mutation in the pathogens. This is not the case with most synthetically produced biocides, which have to be periodically substituted to avoid "Pathogen Tolerance" and/or "Pathogen Mutation" to create a powerful and lasting anti-microbial effect. There are no residues after the application of CitrusDefence® . 

​During the initial anti-microbial contact period, CitrusDefence® combines with the pathogens present on the food and breaks them down into harmless components including CO2 and water. Within a few hours of application the natural components that remain will have either combined with the organic acids and sugars present in the food, or broken down further into harmless components, leaving no detectable residues or toxicity.
